Rice noodles, which can be either round or flat, are the most popular snack or local fast food in Guilin; Most of the people in Guilin eat it every morning as their breakfast. Those who don’t have that much time on eating at noon just have it as their lunch. Guilin rice noodles are pliable but strong, fragrant and mellow and cheap (4.5 yuan for a bowl). Guilin rice noodles can probably be found within 100m of any streets of the city.

For eating rice noodles, gravy, fried peanuts or soybeans, chopped scallions and thin slices of different kinds of meat are added. Well-chopped condiments including spring onions, chili, pickled beans and pickled white radish in chili sauce can be chosen by yourselves according to your own taste. Soup may be ladled on or dispensed from a big pot. Deep-fried dough sticks (youtiao) are often sold at all rice noodles shops.
