If you have some Chinese money before flying back home, you can change it back to the major international currencies like US dollars, Euros, British pounds and others with your passport and the exchange memos given by the banks or money exchange counters.
Usually at the airports with international flights there are Bank of China offices or other banks offering the money exchange service.
